When Vasco da Gama reached India's shores in 1498, he unlocked a spice trade that transformed global cuisine forever. The Portuguese brought chillies from Mozambique to Karnataka — where they were quickly absorbed into the local cuisine.
The town of Byadagi became synonymous with premium chillies. Today, India exports 429+ shipments of Byadagi chilli annually. Chillies account for roughly one-third of India's entire spice trade.
